宋代早期饮茶方式由煎饮变为点饮,烹点技术极为讲究,出现了“斗茶”。“斗茶”不仅是饮出茶的品质,也是一种高雅的活动。
此时,建窑、吉州窑创造性地生产出了兔毫釉、哩变釉、剪纸漏花、瑕帽釉、虎皮釉,继而北方地区也仿制生产出准妙惟肖的兔毫釉、术猖釉,还创造出了铁锈花、黑釉红绿彩和凸线纹等新品种,这一系列成就使黑釉成为铁系色釉中装饰手段最丰富的高温釉。
